Carrot Sauce over Seafood Pasta ... Healthy!

We all have to take pleasure when someone else takes the time to cook for you, especially when its their birthday! woo hoo! So what a luxurious treat. So my friend Joe (aka photography mentor) and I visited the local seafood market in Harlem (116th street between 5th and Malcolm X Blvd) and he bought scallops and shrimps to put in his Carrot Sauce Pasta dish. Did you just get grossed out by the thought of carrot sauce on pasta? Well, quite honestly, it wasn't! It was quite the opposite -- it was refreshing and it didn't leave that "heavy" set feeling in your stomach like after you've had the traditional pasta sauce. So what goes in this lovely concoction? (this is off the top of my head, so please look it up)

Carrot juice, lime juice, green hot pepper (with the seeds taken out), salt and pepper to taste, some butter if you like ...

here is an epicurious recipe that may be helpful, but not exactly what Joe made... Btw, the sauce will be very thin, and if you don't like that, you can thicken it up with some corn starch.
